It's that time of year again! We love to make jam for our friends and family...and ourselves! We started the yearly tradition of making jam when Fi was two years old and the word for the day was "Strawberry"! The thing I try to always do is find the easiest recipe so that Fi will always get to help and this recipe for easy strawberry jam was perfect! With only three ingredients and lemon juice instead of pectin, it's an easy non intimidating recipe that even a toddler can help with. It does involve a hot stove though so adult supervision is always necessary even with my now 7 year old. The recipe is super simple and I know you'll love it!
2 cups of washed and sliced strawberries
1/3 cup of sugar
2 tbs lemon juice
1. Put the strawberries in a saucepan and mix with the lemon juice and the sugar.
2. Stir on medium low until all of the sugar is dissolved.
3. Increase the heat to medium high and bring it to a rolling boil.
4.Stir frequently while it continues to boil, mashing the strawberries as you stir, until the jam has thickened and bubbles cover the surface. Usually around 10-12 minutes for us.
5. Transfer the jam to a jar and let it cool to room temperature before placing the lid on it and storing in the refrigerator. It'll last for 7-10 days.

We normally double the batch and do a few batches back to back to give away to friends to
brighten up their day!
